Step-by-Step Instructions
  1. In a small saucepan, combine apple cider, honey, Dijon mustard, and minced garlic. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 10-15 minutes until thickened.
  2. Heat oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then add them skin-side down to the skillet. Sear for 6-7 minutes until golden brown. Flip and cook for another 5-6 minutes until cooked through.
  3. Pour the thickened glaze over the chicken, reduce heat to medium-low, and spoon the glaze over the chicken for about 5 minutes.
  4. For the slaw, combine shredded cabbage, carrots, and apple slices in a mixing bowl. In a separate bowl, whisk together apple cider vinegar, celery seeds, salt, and pepper. Drizzle dressing over the slaw and toss until coated.
