  • 1 lb Ground Beef 80/20 blend recommended
  • 1 large Yellow Onion minced
  • 3 cloves Garlic minced
  • 1 medium Green Pepper diced and seeded
  • 1 medium Poblano Pepper diced
  • 2 cans Fire Roasted Diced Tomatoes with juices
For the Spice Blend
  • 1/3 cup Chili Powder adjust to taste
  • 2 tbsp Smoked Paprika
  • 1 tsp Garlic Salt
  • 1/2 tsp Chili Pepper Flakes adjust to taste
  • 1 tsp Cinnamon optional chipotle cinnamon
  • 1 tbsp Sugar
  • 1 tsp Italian Seasoning/Oregano optional
For Cooking
  • 2 tbsp Cooking Oil/Butter for sautéing
Optional Add-ins
  • 1 can Kidney or Black Beans rinsed

Step-by-Step Instructions
  1. Sauté the Vegetables: Heat the cooking oil or butter in a large stock pot over medium heat. Add the minced onion, diced green pepper, diced poblano pepper, and minced garlic. Sauté for about 5-7 minutes until golden brown and fragrant.
  2. Brown the Beef: Add in the ground beef, breaking it apart with a wooden spoon. Cook over medium-high heat for 7-10 minutes until fully browned.
  3. Stir in the Spices: Add chili powder, smoked paprika, garlic salt, chili pepper flakes, cinnamon, and sugar. Cook for 2 minutes, stirring constantly.
  4. Add Tomatoes and Simmer: Incorporate the diced tomatoes, bring to a gentle simmer, cover, and cook on low for 2-3 hours.
  5. Adjust Seasonings: Taste and adjust seasonings as necessary.
  6. Prepare for Serving: Skim excess fat from the chili before serving. Optionally, cool overnight for better flavors.
  7. Optional Bean Addition: Stir in rinsed beans when adding the tomatoes and allow to heat through during simmering.
