- Place the seasoned roast into the preheated Dutch oven, covering it securely. Roast for about 1 hour per pound.
- Check for doneness by attempting to shred the meat with a fork; return to oven for 30 minutes if necessary.
- Once tender, increase the oven temperature to 425°F (218°C) and shred the meat into chunks.
- Return the shredded meat to the oven, leaving it uncovered for an additional 25 minutes until edges are crispy.
- Let the roast rest for a few minutes before serving, either as a main dish or in tacos.
