For the Vegetables
  • 2 cups fresh broccoli cut into bite-sized florets
  • 1 small red onion finely diced
For the Dressing
  • 1 cup mayonnaise or Greek yogurt for a lighter version
  • 2 tablespoons red wine vinegar or apple cider vinegar as a substitute
  • 1 tablespoon sugar or honey as a natural sweetener
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Crunch
  • 4 slices bacon cooked until crispy, optionally substituted with toasted nuts

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a boil, add pasta and cook until al dente, about 7-10 minutes. Drain and rinse under cold water.
  2. Wash and chop broccoli into florets. Dice red onion and cook bacon until crispy.
  3. In a bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper until smooth.
  4. In a large bowl, combine pasta, broccoli, onion, and most crumbled bacon. Mix gently.
  5. Cover and chill in the refrigerator for at least 3 hours or up to 24 hours.
  6. Before serving, stir and top with reserved bacon, serve chilled.
