  • 2 cups Vegetable Broth ensure it's gluten-free if required

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking dish.
  2. Peel and chop sweet potatoes, boil in salted water for about 15 minutes until tender.
  3. In a skillet, heat olive oil, add onions, carrots, and celery; sauté for 5-7 minutes.
  4. Add minced garlic, thyme, and rosemary; cook for an additional minute.
  5. Combine rinsed lentils and vegetable broth, bring to a boil, then simmer for 20-25 minutes.
  6. Mash cooked sweet potatoes with salt, pepper, and plant-based milk until smooth.
  7. Layer lentil mixture in the baking dish, top with mashed sweet potatoes.
  8. Bake for 25-30 minutes until golden and bubbly.
  9. Let it cool for about 10 minutes before serving.
