For the Salmon Balls
  • 1 lb Fresh Salmon can substitute with tuna or trout
  • 1 cup Breadcrumbs gluten-free if needed
  • 2 Green Onions chopped; chives can be used
  • 1 medium Red Bell Pepper diced; any colored bell pepper can substitute
  • 2 cloves Garlic minced; fresh is preferred
  • 1 tbsp Fresh Ginger grated; ground ginger in moderation can be used
  • 1 large Egg or flax egg for vegan option
  • 1/3 cup Sweet Chili Sauce adjust spice levels with homemade versions
  • 2 tbsp Soy Sauce tamari for gluten-free or coconut aminos for soy-free
  • 1 tbsp Sesame Oil omit if not available
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise or Greek yogurt for a lighter option
  • 1/4 cup Sour Cream or dairy-free yogurt as an alternative
  • 1 tbsp Lemon Juice or lime juice for a zesty twist
  • 2 cloves Minced Garlic adjust based on personal taste

Method
 

Procedure
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely chop the fresh salmon in a food processor until chunky, avoiding puréeing, then transfer to a mixing bowl.
  3. Add breadcrumbs, green onions, red bell pepper, garlic, ginger, and the egg to the bowl. Pour in the sweet chili sauce, soy sauce, sesame oil, salt, and pepper; mix thoroughly.
  4. Form the mixture into 1-inch balls and place evenly on the prepared baking sheet.
  5. Bake for 15-20 minutes until golden brown and cooked through, then remove and let rest.
  6. In a small bowl, combine mayonnaise, sour cream, minced garlic, lemon juice, and a dash of salt and pepper. Stir until smooth.
  7. Refrigerate the creamy garlic sauce for at least 15 minutes before serving either drizzled over or on the side of the salmon balls.
