- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Finely chop the fresh salmon in a food processor until chunky, avoiding puréeing, then transfer to a mixing bowl.
- Add breadcrumbs, green onions, red bell pepper, garlic, ginger, and the egg to the bowl. Pour in the sweet chili sauce, soy sauce, sesame oil, salt, and pepper; mix thoroughly.
- Form the mixture into 1-inch balls and place evenly on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown and cooked through, then remove and let rest.
- In a small bowl, combine mayonnaise, sour cream, minced garlic, lemon juice, and a dash of salt and pepper. Stir until smooth.
- Refrigerate the creamy garlic sauce for at least 15 minutes before serving either drizzled over or on the side of the salmon balls.
