  • 1 medium Onion Chopped, yellow or white
  • 2 cloves Garlic Minced
  • 15 oz Kidney Beans Canned, drained and rinsed
  • 15 oz Black Beans Canned, drained and rinsed
  • 14.5 oz Diced Tomatoes Canned, fire-roasted for smokiness
For Flavor
  • 2 tbsp Tomato Paste Can use crushed tomatoes as alternative
  • 1 cup Beef or Chicken Broth Use vegetable broth for vegetarian option
  • 2 tbsp Chili Powder Adjust based on heat tolerance
  • 1 tbsp Ground Cumin Can substitute with coriander
  • 1 tbsp Smoked Paprika Regular paprika can be swapped
  • 1 tbsp Dried Oregano Fresh oregano works too
  • 1/4 tsp Cayenne Pepper Omit for milder chili
  • 1 tsp Salt Sea salt is a great option
  • 1/2 tsp Black Pepper
Optional Additions
  • 1 cup Corn Kernels Frozen corn is a great choice
  • 1 medium Bell Pepper Any color, chopped
  • 2 tbsp Cocoa Powder Can substitute with dark chocolate
  • 1 medium Fresh Jalapeños Remove seeds for milder warmth

Method
 

Step-by-Step Instructions
  1. In a skillet over medium heat, brown your choice of ground beef or turkey for about 5–7 minutes, then transfer to the slow cooker.
  2. In the slow cooker with the meat, add chopped onion and minced garlic, then pour in the beans, diced tomatoes, and tomato paste followed by broth.
  3. Stir in chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper.
  4. Cover the slow cooker and set it to low for 7–8 hours or high for 4–5 hours.
  5. Taste the chili and adjust seasoning if needed before serving.
  6. Ladle the warm chili into bowls and garnish as desired.
