Step-by-Step Instructions
  1. Season the chicken thighs or breasts with salt and black pepper on both sides.
  2. Whisk together honey, low-sodium soy sauce, ketchup, minced garlic, grated ginger, rice vinegar, and red pepper flakes in a bowl.
  3. Place the seasoned chicken in the slow cooker and pour the honey garlic sauce over the chicken.
  4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until tender.
  5. Optional: Mix cornstarch with water for a slurry, stir into the sauce, and cook on high for an additional 10-15 minutes to thicken.
  6. Return the chicken to the sauce, coat again, and garnish with sesame seeds and chopped green onions before serving.
