- In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, and a pinch of salt and pepper until smooth.
- Fold in shredded lettuce, sliced red onion, and banana peppers into the mayonnaise mixture.
- Take sub rolls and slice them open. Layer each sub with salami, pepperoni, turkey, topped with a slice of provolone cheese.
- Preheat your broiler to high and place the assembled sandwiches on a baking sheet lined with parchment paper. Broil for 2-3 minutes until the cheese melts.
- Remove sandwiches from the oven and add fresh tomato slices, seasoning with salt and pepper.
- Generously spoon the prepared grinder salad over each sandwich, finishing with grated parmesan cheese.
- Close each sandwich, cutting them in half if desired, and serve immediately.
