Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mash the ripe avocado in a small bowl until smooth; season with a pinch of salt and pepper.
- Spread the avocado mixture on one side of the bread, then layer with cooked chicken and cheese.
- Drizzle olive oil on the outside of the sandwich halves and place it on the baking sheet. Bake for 10-12 minutes.
- If using optional ingredients, slice them while the sandwich is baking, then layer them on after removing the sandwich from the oven.
- Let cool for 2 minutes, then slice diagonally and serve warm.
