Step-by-Step Instructions
  1. In a small bowl, combine your creamy dressing ingredients—yogurt or mayonnaise with a dash of salt. Whisk them together until well blended and velvety. Set the dressing aside.
  2. Slice the onion thinly and immerse it in a bowl of cold water. Let it soak for about 10 minutes, then drain well.
  3. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  4. Wash and slice the cucumber thinly. Remove the seeds if desired and arrange in a colander with a sprinkle of salt for 10-15 minutes.
  5. In a large mixing bowl, combine the cooked pasta, drained onion, and salted cucumber slices. Add any additional veggies now.
  6. Pour the creamy dressing over the mixture and gently toss until well coated.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve cold.
