Marinade Preparation
- In a mixing bowl, combine hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and red food coloring if desired. Stir until smooth.
Marinating the Chicken
- Add chicken thighs to the bowl, ensuring each piece is coated in the marinade. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Cooking Process
- Preheat your oven to 400°F (200°C). Let the chicken sit for about 15 minutes before cooking.
- Remove chicken from marinade and place on a wire rack over a foil-lined baking tray.
- Bake for 25-30 minutes, basting every 10 minutes with reserved marinade.
- In the last 5 minutes, switch to broil to char the chicken slightly.
- Let the chicken rest for a few minutes before slicing and serving.
