Method
 

Marinade Preparation
  1. In a mixing bowl, combine hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and red food coloring if desired. Stir until smooth.
Marinating the Chicken
  1. Add chicken thighs to the bowl, ensuring each piece is coated in the marinade. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Cooking Process
  1. Preheat your oven to 400°F (200°C). Let the chicken sit for about 15 minutes before cooking.
  2. Remove chicken from marinade and place on a wire rack over a foil-lined baking tray.
  3. Bake for 25-30 minutes, basting every 10 minutes with reserved marinade.
  4. In the last 5 minutes, switch to broil to char the chicken slightly.
  5. Let the chicken rest for a few minutes before slicing and serving.
