Pasta
  • 9 oz Spaghetti opt for any long pasta you prefer
Seasoning
  • 1-2 tbsp Coarse Salt to season the pasta water generously
  • Black Pepper add to taste, preferably freshly cracked
Sauce
  • 1 cup Reserved Pasta Water to create a creamy sauce
  • 9 oz Pecorino Romano Cheese freshly grated; Parmigiano-Reggiano can work too

Method
 

Cooking Steps
  1. Fill a large pot with water, bring to a boil, and add coarse salt.
  2. Add spaghetti and cook for 9-11 minutes, until al dente.
  3. Warm a heatproof serving bowl over the boiling water for 2 minutes.
  4. Reserve 1 cup of pasta water, drain spaghetti, and transfer to warm bowl.
  5. Sprinkle grated Pecorino Romano on spaghetti and add some reserved pasta water while tossing.
  6. Adjust sauce consistency by adding more pasta water if too thick.
  7. Serve immediately with extra Pecorino Romano and black pepper on top.
