Preparation
- Cut the pork tenderloin and fresh pineapple into 1-inch cubes. Chop the red onion and green bell pepper into similar-sized pieces.
Marinade
- In a bowl, whisk together BBQ sauce, olive oil, garlic powder, and black pepper. Add cubed pork and chopped vegetables, tossing to coat. Allow to marinate for about 10 minutes.
Build Skewers
- Soak wooden skewers in water for at least 30 minutes. Thread the marinated pork, pineapple, red onion, and green bell pepper onto the skewers.
Grilling
- Preheat the grill to medium heat (350°F). Place skewers on the grill and cook for 15-20 minutes, turning occasionally, until pork is at an internal temperature of 145°F.
Serving
- Remove skewers from heat and let rest for a couple of minutes. Serve alongside fresh salads or grilled corn.
