Ingredients
  

For the Skewers
  • 1 pound Pork Tenderloin Can substitute with pork sirloin or shoulder.
  • 1 cup Pineapple Fresh or drained canned chunks.
  • 1 medium Red Onion Can swap with yellow onion or shallots.
  • 1 medium Green Bell Pepper Zucchinis or cherry tomatoes are alternatives.
For the Marinade
  • 1/2 cup BBQ Sauce Sweet, smoky, or spicy sauce can be used.
  • 2 tablespoons Olive Oil Canola or vegetable oil is also suitable.
  • 1 teaspoon Garlic Powder Minced garlic can be substituted.
  • 1/2 teaspoon Black Pepper Freshly cracked pepper is preferred.

Method
 

Preparation
  1. Cut the pork tenderloin and fresh pineapple into 1-inch cubes. Chop the red onion and green bell pepper into similar-sized pieces.
Marinade
  1. In a bowl, whisk together BBQ sauce, olive oil, garlic powder, and black pepper. Add cubed pork and chopped vegetables, tossing to coat. Allow to marinate for about 10 minutes.
Build Skewers
  1. Soak wooden skewers in water for at least 30 minutes. Thread the marinated pork, pineapple, red onion, and green bell pepper onto the skewers.
Grilling
  1. Preheat the grill to medium heat (350°F). Place skewers on the grill and cook for 15-20 minutes, turning occasionally, until pork is at an internal temperature of 145°F.
Serving
  1. Remove skewers from heat and let rest for a couple of minutes. Serve alongside fresh salads or grilled corn.
