- Preheat the oven to 400°F (200°C).
- Sauté finely chopped mushrooms in olive oil over medium heat, season with salt and pepper, until softened, about 5-7 minutes. Set aside to cool.
- Roll out the cold puff pastry on a floured surface until about 1/8 inch thick. Cut into 4-inch squares.
- Place a small piece of beef tenderloin and a spoonful of cooled mushroom mixture in the center of each pastry square.
- Brush the edges of the pastry with egg wash, then fold over the filling and seal tightly.
- Arrange the bites on a nonstick baking sheet and brush the tops with egg wash.
- Bake for 15-20 minutes until the pastry is puffed and golden brown.
