Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Sauté finely chopped mushrooms in olive oil over medium heat, season with salt and pepper, until softened, about 5-7 minutes. Set aside to cool.
  3. Roll out the cold puff pastry on a floured surface until about 1/8 inch thick. Cut into 4-inch squares.
  4. Place a small piece of beef tenderloin and a spoonful of cooled mushroom mixture in the center of each pastry square.
  5. Brush the edges of the pastry with egg wash, then fold over the filling and seal tightly.
  6. Arrange the bites on a nonstick baking sheet and brush the tops with egg wash.
  7. Bake for 15-20 minutes until the pastry is puffed and golden brown.
