For the Fish
  • 1 whole Branzino Fish Ask your fishmonger to clean, gut, and scale it for convenience.
  • 4 Tbsp. Melted Butter Can be substituted with olive oil.
  • 4 Tbsp. Olive Oil Essential for moisture and flavor.
For the Seasoning
  • 1 tsp. Garlic Powder Can replace with fresh minced garlic (1 clove).
  • 1 tsp. Dried Oregano Marjoram can be a suitable substitute.
  • 1 tsp. Paprika Adds mild warmth and color; smoked paprika can be used.
  • 3 Tbsp. Squeezed Lemon Juice Fresh lemon zest can enhance flavor.
  • Sea Salt and Pepper Adjust to taste.
For the Stuffing & Garnish
  • 4 cloves Garlic Minced.
  • 1 Onion Sliced; additional for cavity.
  • 2 Lemons Sliced for flavoring and garnish.
  • Dry Parsley Fresh herbs can substitute.
For the Sides
  • 1/2 cup White Wine or Chicken Broth Use vegetable broth for a non-meat option.
  • Potatoes Thinly sliced (cubed 1/2 inch); waxy potatoes like Yukon Gold work well.
  • Bell Peppers Thinly sliced; zucchini or asparagus can be alternatives.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and prepare your baking tray by lightly greasing it with olive oil.
  2. Rinse the whole Branzino under cold water and pat it dry using paper towels.
  3. Make three or more diagonal slits on both sides of the fish.
  4. In a small bowl, combine the melted butter, olive oil, sea salt, pepper, garlic powder, dried oregano, and lemon juice.
  5. Carefully brush the seasoning mix over the Branzino, coating both sides and the slits thoroughly.
  6. Stuff the fish with minced garlic, sliced onion, and lemon slices.
  7. Arrange sliced bell peppers and cubed potatoes around the seasoned fish on the baking tray.
  8. Pour white wine or chicken broth over the vegetables.
  9. Sprinkle any remaining seasoning mix over the vegetables.
  10. Bake uncovered for approximately 30 minutes until the fish is flaky and the potatoes are tender.
  11. Drizzle with additional lemon juice and garnish with freshly chopped herbs before serving.
