Cooking Instructions
- Heat 1 tablespoon of oil in a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for about 5 minutes on each side until golden brown and cooked through.
- In the same skillet, reduce heat to medium-low and whisk together BBQ sauce and honey. Pour over seared chicken and allow it to simmer for about 2-3 minutes.
- Add long-grain rice and chicken broth into the skillet. Stir to ensure rice is evenly distributed and submerged. Bring to a gentle simmer.
- Cover skillet with lid and reduce heat to low. Cook for 20 minutes until rice is tender and most liquid is absorbed.
- During the last 5 minutes of cooking, layer mixed vegetables on top of rice, cover again, and steam until heated through.
- Remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork to combine everything and garnish with green onions or parsley, if desired.
