Ingredients
  

For the Chicken
  • 1 pound chicken thighs or breasts can substitute with pork or tofu
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika or regular paprika
  • to taste salt & pepper adjust to taste
For the Sauce
  • 1 cup BBQ sauce homemade or store-bought, low-sugar recommended
  • 1/4 cup honey or maple syrup for vegan alternative
For the Rice
  • 1 cup long-grain rice brown rice may require longer cooking time
  • 2 cups chicken broth can substitute with vegetable broth
For the Vegetables
  • 2 cups mixed vegetables fresh or frozen, bell peppers and broccoli recommended

Cooking Instructions
  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for about 5 minutes on each side until golden brown and cooked through.
  2. In the same skillet, reduce heat to medium-low and whisk together BBQ sauce and honey. Pour over seared chicken and allow it to simmer for about 2-3 minutes.
  3. Add long-grain rice and chicken broth into the skillet. Stir to ensure rice is evenly distributed and submerged. Bring to a gentle simmer.
  4. Cover skillet with lid and reduce heat to low. Cook for 20 minutes until rice is tender and most liquid is absorbed.
  5. During the last 5 minutes of cooking, layer mixed vegetables on top of rice, cover again, and steam until heated through.
  6. Remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork to combine everything and garnish with green onions or parsley, if desired.
