Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  2. In a large mixing bowl, combine cooked chicken, cream of chicken soup, sour cream, and chopped onion. Stir in shredded cheddar cheese and mixed vegetables, then season with salt and pepper.
  3. Spoon the mixture into the greased casserole dish and smooth the top.
  4. In a separate bowl, combine crushed crackers with melted butter and stir until well coated.
  5. Sprinkle the cracker mixture evenly over the chicken mixture and press down slightly.
