- Prepare Marinade: In a large resealable plastic bag, combine orange juice, lime juice, olive oil, minced garlic, achiote powder, ground cumin, coriander, dried oregano, sea salt, and ground black pepper. Seal the bag tightly and shake to mix.
- Marinate Chicken: Add chicken pieces to marinade, ensuring even coating. Seal the bag and gently massage to distribute. Marinate for 30 minutes at room temperature or up to 4 hours in the refrigerator.
- Grill Preparation: Preheat grill to medium-high heat (375°F to 425°F). Clean and oil grill grates to prevent sticking.
- Grilling: Remove chicken from the marinade and discard. Grill chicken skin-side down for about 20 minutes, then flip and grill for an additional 20 minutes until the skin is golden brown and reaches an internal temperature of 160°F – 165°F.
