Preparation Steps
  1. Cook the pasta in salted water according to package instructions (7-9 minutes) until al dente, then drain and rinse under cold water.
  2. Grill fresh corn on medium heat for 10-15 minutes or thaw/drain frozen/canned corn, letting it cool.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper in a bowl.
  4. In a large bowl, combine cooled pasta, corn, cherry tomatoes, red onion, cilantro, and cotija cheese, stirring gently.
  5. Pour the dressing over the salad and toss until evenly coated.
  6. Cover and refrigerate for at least 30 minutes before serving.
  7. Serve chilled and adjust seasoning with salt or lime juice if needed.
