Preparation
  1. Begin by patting your fresh fish fillets dry and drizzle with olive oil. Season with salt, pepper, paprika, garlic powder, and onion powder.
  2. In a large skillet, heat over medium-high heat for about 2 minutes. Lay the seasoned fish fillets into the skillet, cooking for about 3-4 minutes per side until golden brown.
  3. Lower the skillet temperature to medium and add butter and olive oil. As the butter melts, scrape any flavorful bits stuck to the skillet.
  4. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Then add lemon juice and zest.
  5. Season the sauce with salt and pepper to taste and let it simmer for 2-3 minutes while stirring occasionally.
  6. Place the seared fish fillets back into the skillet to simmer briefly in the sauce. Drizzle the warm lemon butter sauce over the fish, and garnish with parsley before serving.
