  1. Prepare Meat Mixture: In a large mixing bowl, combine the ground beef or lamb with grated onion, garlic, plain yogurt, and olive oil. Add salt, pepper, cumin, sweet paprika, oregano, and cayenne. Mix thoroughly until sticky and evenly combined.
  2. Form Meat Sheet: Lay parchment paper on your work surface. Divide the mixture into two portions, placing one on the parchment, and roll it into a thin rectangle about 1/2 inch thick.
  3. Roll the Sheet: Peel off the top parchment layer, then roll the meat from one end to form a log, twisting the ends of the parchment to secure.
  4. Bake: Preheat oven to 200°C (400°F) and line a tray with parchment. Bake the rolled meat for 20-25 minutes until internal temperature reaches 75°C (165°F) and edges brown.
