Method
 

Making the Pretzels
  1. In a large mixing bowl, combine the lukewarm water, instant quick-rise yeast, salt, and granulated sugar. Let sit for 1-2 minutes until frothy.
  2. Gradually add the bread flour, stirring until a dough forms. Knead by hand for 5-7 minutes or use a stand mixer for 4-5 minutes until smooth.
  3. Shape the dough into a ball and place in a greased bowl, cover with a damp cloth, and let rest for 15-20 minutes.
  4. Fill a large pot with water and add baking soda, bring to a boil.
  5. Divide dough into 8 pieces and roll each into a 24-inch rope. Twist into pretzel shape.
  6. Lower pretzels into the boiling water bath for 30 seconds, flipping halfway.
  7. Preheat oven to 450°F. Brush pretzels with egg wash and sprinkle with pretzel salt. Bake for 12-14 minutes until golden brown.
