- Prepare the Lobsters: Bring a large pot of salted water to a rolling boil. Carefully add live lobsters and cook for 8-10 minutes, until shells turn red. Transfer to a colander to cool before retrieving meat.
- Sauté Aromatics and Mushrooms: Melt butter over medium heat in a skillet. Add chopped shallots and sauté for about 2 minutes. Incorporate mushrooms and cook for an additional 5 minutes.
- Create the Sauce Base: Pour white wine into the skillet and simmer for 3-4 minutes. Stir in heavy cream and let thicken for about 3 minutes on low heat.
- Combine Lobster and Seasonings: Chop lobster meat and fold into the sauce. Add paprika, salt and pepper to taste, and half of the Parmesan cheese.
- Fill Shells and Broil: Preheat broiler to high. Spoon filling into cleaned lobster shells, top with remaining Parmesan, and broil for about 3-5 minutes until bubbly.
