- Prepare the seafood: Peel and devein the shrimp, then chop into bite-sized pieces. Pick through the crab meat to remove any shells or cartilage.
- Sauté the base: Melt butter and olive oil in a large pot over medium heat. Add chopped onion, diced celery, and carrot, cooking for 5-7 minutes until softened.
- Add garlic: Stir in minced garlic and cook for another minute until fragrant.
- Incorporate tomato paste: Add tomato paste to the pot and cook for 1-2 minutes. Then sprinkle in flour and stir well.
- Pour in broth: Slowly add seafood or chicken broth while stirring, then add Old Bay seasoning, paprika, bay leaf, and salt and pepper. Bring to a simmer.
