Step-by-Step Instructions
  1. Prepare the seafood: Peel and devein the shrimp, then chop into bite-sized pieces. Pick through the crab meat to remove any shells or cartilage.
  2. Sauté the base: Melt butter and olive oil in a large pot over medium heat. Add chopped onion, diced celery, and carrot, cooking for 5-7 minutes until softened.
  3. Add garlic: Stir in minced garlic and cook for another minute until fragrant.
  4. Incorporate tomato paste: Add tomato paste to the pot and cook for 1-2 minutes. Then sprinkle in flour and stir well.
  5. Pour in broth: Slowly add seafood or chicken broth while stirring, then add Old Bay seasoning, paprika, bay leaf, and salt and pepper. Bring to a simmer.
  6. Blend for texture (optional): Use an immersion blender to partially blend for a smoother bisque.
  7. Finish the bisque: Stir in heavy cream and add prepared shrimp and crab meat, simmer for 5-7 minutes.
  8. Adjust seasoning: Taste bisque and adjust seasoning, removing the bay leaf before serving.
  9. Serve and garnish: Ladle bisque into bowls, garnishing with parsley or chives and serving with lemon wedges.
