Step-by-Step Instructions

  2. In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper until nicely coated. Arrange on a lined baking sheet and roast for about 25-30 minutes.
  3. Once out of the oven, sprinkle crumbled feta cheese on top of each round and drizzle with honey.
  4. Return to the oven for an additional 5-10 minutes to soften the feta without fully melting.
  5. Remove from the oven, cool briefly, and garnish with fresh herbs before serving warm.
