- Whisk together the mayonnaise, red wine vinegar, Italian seasoning, garlic powder, salt, and pepper in a bowl. Refrigerate for at least 15 minutes.
- Chop the iceberg lettuce, red onion, cherry tomatoes, and pepperoncini, and place them in a mixing bowl along with the deli ham and salami.
- Add diced provolone cheese and grated parmesan cheese into the bowl.
- Gently toss all the ingredients together ensuring they are well mixed.
- Drizzle the chilled dressing over the salad and toss again for an even coat.
- Serve immediately for best results, or store in the fridge with dressing separate.
