Ingredients
  

For the Chicken Marinade
  • 1 pound boneless, skinless chicken breasts
  • ¼ cup olive oil extra virgin recommended
  • ¼ cup fresh lemon juice always use fresh
  • 4 cloves garlic minced
  • 1 tablespoon oregano fresh or dried
  • 1 teaspoon paprika optional for milder taste
  • to taste salt
  • to taste pepper
  • a pinch red pepper flakes adjust to spice preference
For the Fresh Salsa
  • 1 cup cucumbers diced
  • 1 cup tomatoes seeded and diced
  • 1 each bell pepper diced
  • ½ red onion finely chopped
  • to taste parsley optional for garnishing
  • ½ cup feta cheese crumbled
For Assembly
  • 4 pitas soft pitas are essential
  • to taste tzatziki sauce store-bought or homemade

Method
 

Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add chicken to the marinade and coat well. Cover and let marinate in the refrigerator for at least 15 minutes.
  2. Chop cucumbers, tomatoes, bell pepper, and red onion. Combine these with feta and parsley, seasoning with olive oil, lemon juice, salt, and pepper. Allow to sit at room temperature.
  3. Heat a skillet over medium-high heat. Add marinated chicken breasts in a single layer, cooking for 3-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until cooked through.
  4. Warm the pitas as preferred. Toast on gas flames, or heat in a skillet or oven until soft and pliable.
  5. Assemble the tacos by filling warm pitas with sliced chicken, topped with salsa and tzatziki sauce. Serve immediately.
