Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Pound the chicken breasts between plastic wrap until about half an inch thick for even cooking.
- Assemble the filling by placing 2-3 slices of ham and 2 slices of Swiss cheese on each chicken breast, then roll tightly and secure with kitchen twine or toothpicks.
- Prepare the breading by whisking the egg & flour or mayo & Dijon mixture in one bowl and placing panko breadcrumbs in another.
- Coat each rolled chicken piece first in the egg/flour or mayo/Dijon mixture, then roll in the panko breadcrumbs.
- Place the breaded chicken on the prepared baking sheet and bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- While the chicken bakes, make the cream sauce by melting butter, whisking in flour, and gradually adding milk, followed by Dijon mustard and grated Parmesan until thickened.
- Let the Chicken Cordon Bleu rest for a few minutes, then slice, drizzle with cream sauce, and serve.
