Ingredients
  

For the Chicken
  • 2 large boneless, skinless chicken breasts
  • 4-6 slices ham consider turkey ham for a lighter option
  • 4 slices Swiss cheese
For the Breading
  • 1 cup panko breadcrumbs regular breadcrumbs yield a softer texture
  • 1 egg + 2 tsp flour egg & flour mixture or 3 tbsp mayo + 1.5 tbsp Dijon
For the Cream Sauce
  • 1.5 tbsp butter use olive oil for a dairy-free option
  • 1.5 tbsp flour substitute with gluten-free flour if desired
  • 1.25 cups milk almond milk or coconut milk works for dairy-free
  • 2 tbsp Dijon mustard whole grain mustard can be used for texture
  • 3 tbsp grated Parmesan use nutritional yeast for a vegan alternative

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Pound the chicken breasts between plastic wrap until about half an inch thick for even cooking.
  3. Assemble the filling by placing 2-3 slices of ham and 2 slices of Swiss cheese on each chicken breast, then roll tightly and secure with kitchen twine or toothpicks.
  4. Prepare the breading by whisking the egg & flour or mayo & Dijon mixture in one bowl and placing panko breadcrumbs in another.
  5. Coat each rolled chicken piece first in the egg/flour or mayo/Dijon mixture, then roll in the panko breadcrumbs.
  6. Place the breaded chicken on the prepared baking sheet and bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  7. While the chicken bakes, make the cream sauce by melting butter, whisking in flour, and gradually adding milk, followed by Dijon mustard and grated Parmesan until thickened.
  8. Let the Chicken Cordon Bleu rest for a few minutes, then slice, drizzle with cream sauce, and serve.
