  • 4 ounces Rice Vermicelli Noodles Avoid overpacking
For the Dipping Sauce
  • 1/4 cup Peanut Butter Almond butter can be a great alternative
  • 2 tablespoons Soy Sauce Tamari works well for gluten-free
  • 1 tablespoon Lime Juice Lemon juice works as an alternative
  • 1 tablespoon Honey Agave syrup can be a substitute for vegan option
  • 1 clove Garlic (Minced) Reduce if milder taste is desired
  • 1 teaspoon Crushed Red Pepper Flakes Optional, adjust to taste
  • 2 tablespoons Warm Water Used to thin the dipping sauce

Method
 

Step-by-Step Instructions
  1. Cook the rice vermicelli noodles according to package instructions, about 3-4 minutes in boiling water. Drain and rinse under cold water.
  2. Fill a large shallow dish with warm water and dip one rice paper wrapper for about 10 seconds until pliable.
  3. On the bottom third of the wrapper, layer rice vermicelli, shredded carrots, sliced red bell pepper, mint, cilantro, and shrimp or tofu.
  4. Fold the bottom edge over the filling, tuck it snugly, fold in the sides, and roll tightly.
  5. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, minced garlic, and warm water. Add crushed red pepper flakes to taste.
  6. Serve the spring rolls with the peanut dipping sauce on the side.
