  • 1 cup Frozen Corn Fresh corn also works well.
  • 1 can Black Beans Rinse to reduce excess sodium.
  • 2 tablespoons Lemon Juice Lime juice is a great substitute.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Chili Powder
  • 1/4 cup Fresh Cilantro Use parsley if unavailable.
  • to taste Salt & Black Pepper Adjust to taste.
  • 2 cups Enchilada Sauce Can be substituted with salsa.
  • 2 cups Monterey Jack Cheese Can be replaced with cheddar or non-dairy cheese for a vegan option.
Optional Toppings
  • 1 medium Sliced Avocado
  • 1 cup Additional Cheese Sprinkle more before serving.
  • 1/4 cup Extra Fresh Cilantro For garnish.

Method
 

Step-By-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 3-quart baking dish with cooking spray.
  2. In a medium pot, bring vegetable broth to a boil. Add rinsed quinoa, cover, and simmer for 15 minutes until fluffy.
  3. Sauté diced onion, minced garlic, jalapeno, and bell peppers in olive oil for 5-7 minutes until tender.
  4. In a large bowl, combine quinoa, sautéed vegetables, half the cheese, black beans, corn, lemon juice, and spices. Mix gently.
  5. Pour mixture into baking dish, top with remaining cheese, and spread evenly.
  6. Bake for 30 minutes until cheese is bubbly and golden brown.
  7. Let cool slightly, garnish with cilantro and lime juice, then serve warm.
