Ingredients
  

Filling
  • 1 lb Ground Beef Can substitute with ground turkey or lentils
  • 1 medium Onion Diced, can substitute with shallots
  • 2 cloves Garlic Minced
  • 1 tsp Cumin Adjust to taste
  • 1 tbsp Chili Powder Use mild or spicy based on preference
For the Enchiladas
  • 8 pieces Tortillas Flour or corn, lightly fried
  • 2 cups Enchilada Sauce Red or green
  • 2 cups Shredded Cheese Use cheddar, Monterey Jack, or a blend

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and diced onions, cooking for about 5-7 minutes until browned.
  3. Stir in the minced garlic, cumin, and chili powder, cooking for an additional minute.
  4. Lightly fry the tortillas in a separate pan for 10-15 seconds on each side.
  5. Spoon a generous amount of the beef mixture onto each tortilla, rolling tightly and placing seam-side down in a greased baking dish.
  6. Pour enchilada sauce evenly over the top and sprinkle shredded cheese over the sauce.
  7. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden brown.
  8. Let the enchiladas cool slightly before serving, optionally garnished with cilantro or jalapeños.
