Step-by-Step Instructions
  1. Slice the chicken breast into 1-inch strips and set aside.
  2. Slice the red, yellow, and green bell peppers; chop the yellow onion; mince the garlic.
  3. Pour half of the salsa into the crockpot; layer with half of the sliced peppers, half of the onions, and garlic.
  4. Add chicken strips evenly over the veggies; sprinkle fajita seasoning and chili powder on top.
  5. Layer remaining salsa over chicken, then add remaining peppers and onions.
  6. Squeeze lime juice over mixture; stir gently once and keep layered.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours, checking chicken internal temperature.
