Ingredients
  

For the Shrimp Cakes
  • 1 pound Fresh Shrimp peeled and deveined
  • 1 cup Breadcrumbs panko or gluten-free recommended
  • 1 large Egg beaten, or flaxseed meal as vegan alternative
  • 3 tablespoons Green Onions finely chopped
  • 1 each Lemon Juice and Zest preferably fresh lemons
  • to taste Salt
  • to taste Pepper
For the Lemon Aioli
  • ½ cup Mayonnaise Greek yogurt can be used
  • 1 clove Minced Garlic or garlic powder in a pinch
  • 1 each Extra Lemon Juice for added zesty flavor

Method
 

Preparation
  1. Start by peeling and deveining the shrimp, then chop them into small pieces.
  2. In a large mixing bowl, combine chopped shrimp, breadcrumbs, beaten egg, green onions, lemon juice, lemon zest, salt, and pepper.
  3. Gently stir until just combined to keep the mixture light.
  4. Shape the mixture into patties about one inch thick and chill in the refrigerator for at least 30 minutes.
  5. Heat olive oil in a skillet over medium heat, then cook the patties until golden brown, about 4 minutes per side.
  6. In a separate bowl, make the lemon aioli by mixing mayonnaise, minced garlic, extra lemon juice, and a pinch of salt and pepper.
  7. Serve the shrimp cakes with the lemon aioli drizzled on top.
