  • 0.5 cup red enchilada sauce can substitute with green

  • 2 tablespoons olive oil or avocado oil

  3. Warm corn tortillas in the microwave for 30-60 seconds wrapped in a damp paper towel.
  4. Brush one side of each tortilla with olive oil, place on baking sheet, and fill with cheese, beef mixture, and more cheese before folding.
  5. Bake for about 16 minutes until golden brown and crispy.
  6. Let cool for 3 minutes before serving with dips like salsa or guacamole.
