  • 0.5 teaspoon Paprika smoked paprika for variations
  • 1 cup Shredded Cheddar Cheese sharp cheddar for flavor
For Seasoning
  • 1 teaspoon Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Boil a pot of water over high heat. Add 1 teaspoon of salt and 2 cups of macaroni. Cook for about 7 minutes until al dente.
  2. Leave the cooked macaroni in the pot without draining. Stir in 1 cup of whole milk, 1 cup of whole milk ricotta, 1 tablespoon of Dijon mustard, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of paprika.
  3. Gradually add in 1 cup of shredded cheddar cheese, stirring continuously until melted and the sauce is smooth. If needed, add a splash of milk to reach desired creaminess.
  4. Taste and adjust seasoning with salt as needed. Stir to distribute evenly.
  5. Serve warm in bowls, optionally garnished with extra paprika or herbs.
