Step-by-Step Instructions
  1. Begin by filling a large pot with water and bringing it to a boil. Once boiling, add pasta and cook according to package instructions, about 8-12 minutes. Drain and set aside.
  2. In a large skillet over medium heat, add lean ground beef. Break it apart as it cooks for 5-7 minutes until browned. Drain excess grease.
  3. Add diced onion and minced garlic to the skillet. Sauté for 3-5 minutes until onion is translucent.
  4. Stir in drained diced tomatoes, beef broth, Greek yogurt, and Parmesan cheese. Mix until blended and cook for 2-3 minutes.
  5. Reduce heat to low and let sauce simmer for 5-7 minutes, stirring occasionally.
  6. Gently fold in cooked pasta, mix and heat for another 2-3 minutes until everything is heated through.
  7. If sauce is too runny, mix cornstarch with water and gradually stir into the sauce until thickened.
