  • 2 medium Red Bell Pepper Diced
  • 1 medium Red Onion Cut into wedges
  • 2 medium Potatoes Cubed
  • 3 tbsp Olive Oil For roasting
  • 1 tsp Paprika Adjust to taste
  • 1 tsp Dried Basil
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Dill
  • 1 tbsp Parsley
  • to taste Salt
  • to taste Pepper
For the Tzatziki Sauce
  • 1 cup Plain Yogurt Greek or plant-based
  • 1/4 cup Raw Cashews
  • 1/4 cup Tofu
  • 1 medium Cucumber Grated and moisture removed
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Fresh Dill

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare vegetables by cutting them into uniform sizes.
  3. In a small bowl, mix together the paprika, dried herbs, salt, and pepper.
  4. Toss the vegetables with olive oil and sprinkle the spice blend on top.
  5. Roast the vegetables for 40 minutes, stirring halfway through.
  6. In a blender, combine yogurt, cashews, tofu, and garlic. Blend until smooth.
  7. Stir in grated cucumber, dill, and red wine vinegar into the tzatziki sauce.
  8. Serve the tzatziki sauce with the roasted vegetables.
