Method
 

Marinating and Cooking
  1. In a mixing bowl, combine hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and optional red food coloring. Whisk until smooth. Coat the chicken thighs thoroughly in the marinade and refrigerate for at least 4 hours.
  2. Preheat your oven to 400°F (200°C).
  3. Line a baking tray with aluminum foil and place a wire rack over it. Arrange the marinated chicken thighs skin-side up on the wire rack.
  4. Bake the Char Siu Chicken for 25-30 minutes, basting every 10 minutes with the reserved marinade until the internal temperature reaches 165°F (75°C).
  5. In the last 5 minutes, switch to broil mode for a charred exterior; monitor closely to prevent burning.
  6. Let the chicken rest for 5 minutes before slicing and serving with rice or noodles.

Notes
