Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a 9x9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar until well incorporated.
  3. Press this mixture into the bottom of the prepared baking pan and bake for about 10 minutes, until lightly golden.
  4. In a large bowl, beat together softened cream cheese and granulated sugar until smooth, then add eggs and vanilla.
  5. Pour the cheesecake filling over the baked crust and bake for 25-30 minutes until the edges are set.
  6. Melt butter in a skillet and add diced apples and brown sugar, stirring for 5-7 minutes until caramelized.
  7. Spread the caramelized apples evenly over the cheesecake layer and drizzle with caramel sauce.
  8. Refrigerate the assembled bars for at least 2 hours before slicing and serving.
