- Preheat your oven to 325°F (160°C).
- In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into a greased 9x9-inch baking dish and bake for 10 minutes.
- Beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing at low speed, and stir in vanilla extract.
- Pour the cheesecake mixture over the pre-baked crust, spreading evenly with a spatula.
- In a medium bowl, toss chopped apples with brown sugar and ground cinnamon until evenly coated. Spread over the cheesecake layer.
- Bake for 30-35 minutes until the cheesecake is slightly jiggly in the center.
- Let the bars cool in the pan for 10 minutes, then transfer to the fridge and chill for at least 2 hours.
- Drizzle caramel sauce over the top of the chilled bars before serving, cut into squares, and enjoy.
