Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather ingredients while it warms up.
  2. Season the chicken with salt and black pepper on both sides. Set aside.
  3. In a skillet, heat olive oil over medium-high. Sear chicken for 3-4 minutes each side until golden.
  4. Remove chicken; add diced jalapenos and peaches to the skillet. Cook for 2-3 minutes.
  5. Whisk together honey, apple cider vinegar, water, and cornstarch for the glaze.
  6. Pour the glaze over jalapenos and peaches, stir gently, and combine.
  7. Reintroduce the chicken to the skillet and spoon some glaze over it.
  8. Transfer skillet to the oven and bake for 20-25 minutes until chicken reaches 165°F.
  9. Let chicken rest for 5 minutes, then serve with remaining glaze.
