- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of unsalted butter in a large oven-safe skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Gradually mix in 6 cups of fresh spinach, cooking until wilted, about 3-4 minutes. Season with salt and pepper.
- Lower heat and pour in 1 cup of heavy cream, zest and juice of half a lemon, and a dash of nutmeg. Simmer for 2-3 minutes.
- Stir in 1 cup of grated Parmesan cheese until melted and well combined.
- Create small wells in the spinach mixture and carefully crack 4-6 eggs into these wells. Season the eggs with salt and pepper.
- Sprinkle additional Parmesan cheese over the top, then transfer the skillet to the preheated oven. Bake for 12-15 minutes.
- Remove from the oven and allow to cool for a few minutes before serving.
