  • 6 cups fresh spinach Squeeze out excess moisture if using thawed frozen.
  • 2 tablespoons unsalted butter Can substitute with olive oil for dairy-free.
  • 1 clove garlic Minced for best flavor.
  • 1 cup heavy cream Can substitute with half-and-half or coconut cream.
  • 1/2 whole lemon Zest and juice to be added.
  • 1 pinch nutmeg Freshly grated preferred.
  • salt To taste.
  • pepper To taste.
For the Egg Layer
  • 4-6 large eggs Fresh, for best results.
  • 1 cup grated Parmesan cheese
For Baking
  • 1/4 cup additional Parmesan cheese For topping.

Method
 

Step-by-step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of unsalted butter in a large oven-safe skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Gradually mix in 6 cups of fresh spinach, cooking until wilted, about 3-4 minutes. Season with salt and pepper.
  4. Lower heat and pour in 1 cup of heavy cream, zest and juice of half a lemon, and a dash of nutmeg. Simmer for 2-3 minutes.
  5. Stir in 1 cup of grated Parmesan cheese until melted and well combined.
  6. Create small wells in the spinach mixture and carefully crack 4-6 eggs into these wells. Season the eggs with salt and pepper.
  7. Sprinkle additional Parmesan cheese over the top, then transfer the skillet to the preheated oven. Bake for 12-15 minutes.
  8. Remove from the oven and allow to cool for a few minutes before serving.
