Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thaw the shrimp if necessary and pat them dry with paper towels.
  3. Set up a breading station with three bowls: mix flour, salt, and pepper in one, beat eggs in another, and combine coconut, breadcrumbs, and paprika in the third.
  4. Coat each shrimp first in the flour mixture, then the beaten eggs, and finally press into the coconut-breadcrumb blend.
  5. Transfer the breaded shrimp to the baking sheet and bake for 12-15 minutes, flipping halfway through.
  6. While the shrimp bakes, whisk together mayonnaise, sweet chili sauce, lime juice, and garlic powder in a small bowl.
  7. Serve the cooked shrimp hot with the sweet chili mayo for dipping.
