  • 2 pounds Beef (Chuck roast) ideal for flavor and tenderness
For the Potatoes
  • 4 medium Yukon Gold Potatoes can substitute with waxy potatoes
For the Flavor Base
  • 4 cloves Garlic minced
  • 1 stick Butter Kerrygold recommended
  • 2 cups Broth Swanson recommended
For the Garnish
  • 1/4 cup Fresh Parsley finely chopped

Method
 

Cooking Instructions
  1. Sear the beef in a skillet over medium-high heat for 3-4 minutes per side until browned. Transfer to the slow cooker.
  2. Wash and halve the Yukon Gold potatoes, then layer them in the slow cooker.
  3. In a bowl, mix minced garlic, chunks of butter, and broth. Pour over beef and potatoes.
  4. Cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is tender.
  5. Garnish with fresh parsley and serve hot, drizzling with garlic butter sauce.
