Step‑by‑Step Instructions
  1. Preheat your oven to 325°F (163°C). Gather your ingredients.
  2. Generously season the beef short ribs on all sides with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Brown the short ribs on all sides for about 3-4 minutes each.
  4. Remove the short ribs and sauté diced onion, minced garlic, chopped carrots, and celery for 5-7 minutes.
  5. Deglaze the pot with apple cider, scraping the bottom. Add thyme and bay leaf.
  6. Return the short ribs to the pot, ensuring they are mostly submerged in the liquid.
  7. Cover the pot and braise in the oven for 2.5 to 3 hours.
  8. Let the short ribs rest for a few minutes before serving.
